Keto Beef Stroganoff

Coach Mike is always throwing dinners together based on what he has handy and what he’s in the mood for, and sometimes they’re wins and sometimes big losses. This one was a big win! It’s a hearty, filling and macro friendly flavor bomb. Plus, let us tell you, whoever first used Egglife wraps for noodles is a genius in our book! Learn more about them here.

INGREDIENTS:

  • 1 pound 93/7 ground beef

  • 1 cup beef bone broth (Kettle & Fire is a great brand!)

  • 8 ounces sliced mushrooms

  • 1 ounce diced onion

  • 2 tablespoons avocado oil (or fat of choice!)

  • 4 tablespoons heavy cream

  • 4 ounces cream cheese

  • 1/4 tsp nutmeg

  • 1 tsp pepper

  • salt to taste

  • 8 Egglife Original Egg White Wraps sliced into noodle width strips

RECIPE STEPS:

  1. Sauté ground beef and onion in 1 tablespoon avocado oil over medium heat until meat is brown and onions are soft. Remove from pan but leave any drippings behind.

  2. Add remaining oil to pan, sauté mushrooms until browned.

  3. Return beef & onions to the pan. Add broth, nutmeg and pepper. Increase heat if needed, bring to a light boil and simmer for 5 minutes stirring well.

  4. Lower heat. Add heavy cream and cream cheese and stir to combine. Simmer for 3-5 minutes, taste for salt and adjust seasoning.

  5. Add sliced wraps, toss together well for 2-3 minutes to heat through and serve.

  6. Enjoy!
